Marjoram, Sweet
Marjoram is also called wild Oregano because of the striking similarities between these two herbs of the same family. Aroma is similar to oregano, but sweeter and more balsam-like. Compact plant with small round or oval leaves that are light green with grey on the underside and covered with fine hair. The enchanting, sweet, fragrant leaves and the young stem tips are used fresh or dried adding a strong spicy flavour to meats, poultry, vegetables, soups, sauces, stuffing, stews, dressings and salads. A must in German potato soup, rubbing with fresh leaves before roasting improves all strong meats. Adds special flavour to sausages and meatloaf. Cut often to prevent flowering. Used in calming and soothing and in aromatherapy preparations, the flowers are edible like the herb. Use plant tops to dye wool in shades of yellow, orange, brown and grey.

Oregano, Greek
This is the true oregano collected wild in the mountains of Greece. The ancient Greeks gave it its name oregano, meaning joy of the mountains. These fragrant flowering plants grow freely on the steep rocky alkaline hills of Greece, Sicily, Southern Italy and Israel, filling the Mediterranean mountain sides with their joyful cheer and intense aroma. Oregano has not only flavoured foods for thousands of years, but it also has had a variety of medicinal uses, from relieving rheumatism and asthma to decongesting stuffy head colds and even calming sea-sickness. Has excellent flavour considered to be better than the Italian Oregano. Low-growing plants have white flowers. Harvest when it is beginning to flower.

Parsley, Italian Flat Leaf
This culinary delight and natural breath freshener is a very popular herb and has been cultivated for thousands of years. The Romans used it to disguise strong odours, but believed that the seeds had to go to the devil and back seven times before it would germinate! The dark green, glossy flat leaves of this Italian parsley has a strong flavour, stronger than the curled varieties. The plants are taller and have larger leaves than the standard strain. The is the strain generally preferred for cooking. All parts of the plant are high in vitamin A and quite nutritious. There is hardly a culinary dish that it cannot be used in. It is flavourful, but is also useful in blending the flavours of other herbs and aids digestion. Leaves may be cut repeatedly. Used fresh or dried.

Thyme, Common
Thyme comes in so many varieties and flavours that it could make a garden all by itself! Common thyme is the most popular herb in this family and is indispensable in French cooking there is almost no stew, soup, or ragout that does not call for a pinch or two. In their natural environment, they grow at the edges of paths in rockeries and on escarpments, habitats that can be easily recreated in the garden. Essential in 'bouquet garni' (bundle of herbs tied together), the gentle pungent flavour is used as appropriate seasoning for rich meats and fish, improving their digestibility. Sprigs of the aromatic leaves bring depth of flavour of soups, gravies, casseroles, stews, salad dressings and teas. Said to calm the nerves and soothe headaches, current research has shown that Thymus vulgaris helps arrest the aging process and is very beneficial in the treatment of stomach ulcers. Thyme has a lovely appearance with its short lavender flower spikes and makes a very attractive house plant.

Tips for Gardener:

Always sow seeds evenly in well-draining, loose, rich, fine soil or fresh compost.
Do not bury the seeds too deep.
Cover the seeds lightly with a fine layer of the sowing media. For seeds that need surface sowing just pat the seeds down gently ensuring the seeds make firm contact with the sowing media but do not cover the seeds!
Water evenly in fine mist two times a day. Avoid over watering as excessive moisture can cause Damping off, a disease that causes young seedlings to collapse suddenly. It is worse in hot and humid conditions.
Give young seedlings more than 8 hours of sunlight everyday while protecting them from excessive heat.
Transplant seedlings after the second set of true leaves appear.
Fertilize by side-dressing once every 2 to 4 weeks. For vegetables, fruits and flower plants fertilize just before the first flower appears.
Apply a fungicide during the rainy season.
Promptly remove any plant that shows signs of a disease or of premature decay.
Grow French Marigold as companion to deter pests and to enhance the visual appeal of the growing patch!
